Soundtrack for season 5 introduces many themes for new characters and locations. We finally have a song for House Martell (track 4), but I think the ones for House of Black and White (track 3) and Sons of the Harpy (track 17) stand out the most.
On soundtrack for season 4 there finally is a theme for dragons (track 3). We also got an additional song for House Lannister (track 2), which already received its own theme on the soundtrack for season 3. I still don't know which one I like better because both are nice.
Soundtrack for season 3 has many tracks connected with the Lannisters. Track 3 can be treated as the theme song for the whole house, whereas track 9 is specifically for Jaimie.
On soundtrack for season 2 it is the first time that we can hear the theme song for House Greyjoy (track 3). It is named "What Is Dead May Never Die" because on the Iron Islands over which the Greyjoys ruled the main deity was the Drowned God.

An interesing fact about the main theme and most of this show's music is that they wanted to avoid using flute and vocals in order to make it more distinct from other fantasy shows. This is why you can hear so much cello here instead.
